Cajun Groundhog Day
We have our own colorful tradition in Louisiana on this special day. Pierre C. Shadeaux, a famous nutria from Louisiana's own swamps predicts our weather.
Pierre did NOT see his shadow outside of his custom built Acadian Cottage. Do you know what that means kids? Spring and warmer weather is just around the corner for us in Louisiana. Yay!

Eek gads. They're all creepy in my book. Nutria, groundhogs, rats and the like.
See, but the "groundhog" is the rodent that the holiday "Groundhog Day" is named after.
so basically you're nutria may have not seen his shadow, but it is completely irrelevant in relation so the typical "hocus pocus" that this day brings.

Nutria my ass. That's a Belgian wharf rat!
Heart Healthy "Crock-Pot" Nutria
2 hind saddle portions of nutria meat
1 tomato, cut in big wedges
2 carrots, sliced thin
1/2 cup white wine
2 teaspoons chopped garlic
1 cup demi glace (optional)
1 small onion, sliced thin
2 potatoes, sliced thin
Brussel sprouts
1 cup water
salt and pepper to taste
Layer onion, tomato, potatoes, carrots and Brussel sprouts in crock pot. Season nutria with salt, pepper and garlic to taste and place nutria over vegetables. Add wine and water, set crock pot on low and let cook until meat is tender. Cook for approximately 4 to 6 hours. Garnish with vegetables and demi glace (4 servings).

That being said, do you really need any kind of rodent to tell you that your already warm weather is going to remain warm? :-)
Personally, I think Nutria sounds like a great name for a new dietary supplement.
New Orleans doesn't have winter (that one day in december with snow doesn't count)... The only seasons you have are warm and hot... so how can you say spring is coming?
